Sorry for the lack of posts, but we are living it up & vacationing! We spent four days at the beach in Corpus Christi with Jack & Lorraine's fam, then we (me and Dave and the kids) took off to San Antonio, where we are right now. I've got some pretty good pics from the beach and whatnot, but I will save those for another time. Tomorrow we are going to Horse Shoe Bay right outside of Austin - we are so stoked for that. We have been swimming every day since Aug. 10th, it's been great. And we are going to Waco this weekend to see Elder Daniel Jackson get home from his mission! We are really excited to see him - especially Blake, since she now shares her Uncle Daniel's birthday.
I took Blake to her two month appointment just before we left and thought I should post it on here so I don't forget her stats. She weighs 12 pounds (I KNOW...such a chunk) and is in the 97th percentile for her height. She sure didn't get her height from my side of the family!
I'll try to post the pictures as soon as we get home and get settled in.
P.S. This is totally random, but does anyone have any recipes where you can add spinach to it without tasting it very much? I've been trying to think of ways to sneak it into food, but so far I haven't found any good recipes.

*LOWFAT SPINACH LASAGNA

INGREDIENTS:

2 C lowfat cottage cheese
1 egg
2 C lowfat shredded mozzerella cheese
1 jar traditional spaghetti sauce
10-oz package frozen chopped spinach (or equivalent fresh)
9 uncooked lasagna noodles
1 C water
1/8 tsp. pepper
3/4 tsp. oregano
*salt, to taste

In large bowl, mix thawed and drained spinach, cottage cheese, 1 C mozzerella, egg and seasonings. Spray PAM on lasagna tray or 13x9x2 baking dish. Layer 1/2 C spaghetti sauce, 3 noodles, and 1/2 cheese mixture. REPEAT layer one more time. Top with remaining noodles and sauce. Sprinkle with 1 C mozerella. You can also sprinkle with grated parmesan if you'd like. Pour the water around the edges of the lasagna and put a few toothpicks on top (don't forget these - OUCH!) which prevents the cheese from sticking to the foil. Cover with foil and bake 60-75 minutes at 350 d (until bubbly). Let stand.

I have some spinach dips that have so much other stuff in them you don't know about the spinach, but you know about the fat. Maybe that defeats the goodness of the spinach. Give Dan a big hug for me.

Hey Chels, just checking in to see how your fam is doing. Blake is huge just like Carson was, I love it. Now Carson is totally skinny like B. And I'm confused, are you living in Dallas for the summer or something??

I have a couple recipes at home that have a lot of spinach in them, i'll e-mail them to you as soon as I get home! I can't believe Blake is 12lbs! Saylor is still 16lbs and he is ONE!! HaHa!!! Glad your having such a great time! Love you
