Give me some ideas, please.

I am in need of some dinner ideas from everyone. I need to menu plan, but not for another week or so. That will give all of you plenty of time. :) Just let me know what you are having for dinner tonight or, even better, if you have already menu planned - just give me your lists.
And this includes all you blog-stalkers out there. Time to 'fess up. I know I'm not the only one. I really need lots of ideas here.
Thanks!

We just made Fried Rice last night and had that with chicken. You can get some egg rolls too if you want. It was delish. We are trying to eat well with the new year. But Meat loaf is always a favorite with potato pearls. Yummy. Can't wait to find out what you are having. For the record, I think another boy. If we have another kid, I think I would like another boy. That's a BIG if.

Chicken Alfredo, meatloaf, and sweet and sour chicken are just a few of the dinner ideas on our menu for this next week.

Please....no more chicken pillows. For ANYONE. Ever.

Oh, man. Where should I begin? Some of my favorite fast and easy ideas:
- baked potatoes with broccoli and cheese sauce and a salad
- stir fry (just find a good teriyaki sauce or make your own--I have a killer recipe) with chicken and your favorite stir fry veggies and rice
- baked macaroni and cheese
- risotto with mushrooms and peas for a vegetarian meal
- tonight, we're having oven fried chicken with sweet potatoes and biscuits (hey, I'm a Texas girl. What do you expect?)
- chili and cornbread (http://www.recipesecrets.com/recipeDisplayMRS.aspx?recipeid=2852&version=2)
- Russian chicken (William LOVES this: http://www.cookingcache.com/poultry/russianchicken.shtml?rdid=rc1)

That should get you through the week!

And this is a great food blog for meals: http://thecrepesofwrath.wordpress.com/ She's a student so everything she makes is budget priced and easy. No crazy ingredients there and almost everything looks tasty.

Wellllll....it's not on our menu this week but I have a "Tacoritas" recipe (I swear I didn't name it) that makes 10-12 and is easy to make and really tasty.

Tacoritas

Package of flour tortillas (usually makes 10-12 depending on how big you want them)
1 pound ground beef
1 can refried beans
1 can Rotel tomatoes
2 cans green chilis
Shredded cheese (I buy it pre-shredded, the mexican blend kind)
1 can cream of chicken soup
1 can green enchilada sauce
1/2 cup milk

Brown ground beef, drain grease, add refried beans. Heat through and add 1-2 tablespoons of beef mixture onto a tortilla. Add some tomatoes, green chilis, and cheese. Roll and place in a greased 9 X 13 inch pan, seam side down. In a bowl add the crm. of chicken soup, ench. sauce, and milk (I add a can of green chilis because I'm addicted :P). Pour over tacos in pan (I like to make sure every inch gets wet because that way the tortillas don't dry out in the oven). Bake at 350 for 25 minutes. Take out and cover with cheese and put in for another 5 minutes.

These are so good I swear, we have them every couple weeks. What are you needing recipes for? I might be able to find another good one but it will have to be tomorrow, it's already 11:00 and I'm tired! Hope this helped!

Matt and I made this great tortilla soup in the crock pot. 2 chicken breasts, a can of cream of chicken, a can of diced tomatoes with chillies, and a little water. When the chicken is cooked, take it out and chop it up. put it back in and mix in cheddar cheese and cut up flour tortillas. I hope you like tortillas. This is really really good as leftovers too.

I so agree with Nell....no more chicken wraps (what we call them).

Call me if you want some recipes. I don't want to take up so much space here. I got a new recipe for enchilladas that's really fast and easy.

Masaman Thai Curry

1 lb. Chicken (cubed)
1 can of Masaman Curry (from International market or maybe even your grocery store)
1 can of Coconut Milk

Cook chicken in it until done. Add diced potatoes and carrots and another can of coconut milk.

Eat over rice. Super yummy and easy if you like Thai food!

Hi. You don't know me, but Dave does. I'm a "blog stalker." I found your blog on Anjanette's and I was surprised that I actually knew you. I met Dave back in like 2001 when he was selling pest control in Modesto, CA. My friends and I hung out with Dave, Tyler and Ryan most of the summer. Anyways, I don't have any recipe ideas, but I figured it was time to let you know I've been stalking you. Tell Dave hi for me and Bentley is sooo adorable (I LOVE his name by the way).
Later,
Amy (Erlenbusch) Nessen

We live on the south end of town in the 2nd Ward. Everyone here does know eachother because they're all related. It's like living in a small Utah town. Does your BIL's family still live here?

We had pizza bread tonight. We are simple eaters(mostly because I don't do a lot of cooking). Just french bread and put on your toppings. Yummy and perfect for teh kids. We also do a lot of chili with rice or fry bread. Spaghetti is a staple. We eat a lot of breakfast meals at dinner. Our favorite is "shipwreck" (just eggs, sausage/bacon, potatoes--like a breakfast skillet). I am not sure this really helps, you have some awesome suggestions so mine seem lame, but that is what we do.

We love homemade soups! The freeze well, make excellent leftovers, and make an easy wholesome meal. I just tried a new chicken soup recipe I found here.
http://www.yourhomebasedmom.com/dinner-time-helps/
The fun thing is that it is based off the chicken soup from the restaurant, Elephant's in Portland. I used whole milk instead of 1/2 and 1/2 and topped with shredded mozz and parm cheese. All loved it, including Brandon :)

Matt made me chicken stir fry yesterday with bell peppers and red onions. Mary tought us that seseme oil is what makes everything taste chinese and it's try. The throw anything in a pan with chicken and seseme oil and you have the most chinese stir fry ever. Yum. Now I'm hungry.
